Recovering data files from several old hard drives ... gaming computer builder

When I toss an old computer I keep the old hard drives. As a result, I have hard drives from the 90's, 2001, and 2008.

What is the best was to recover the data from each? Ideally I'd like to use my MacBook, but this may be an issue - the hard drives are from PC's, each with difference versions of Windows.
